The cocktail world has many specialized terms. Mastering this vocabulary will help you better understand recipes and educational materials.

Basic Bartending Terms

ABV (Alcohol By Volume) 酒精度 Percentage of alcohol content, e.g., 40% ABV
Aperitif 餐前酒 Low-alcohol drink served before a meal to stimulate appetite
Back 配饮 A drink served alongside a cocktail, e.g., water or beer
Bitters 苦精 Highly concentrated botanical flavor extracts, used by the "dash"
Blend 搅拌机混合 Combining ingredients and ice in a blender
Build 直接注入 Mixing ingredients directly in the serving glass
Call drink 指名酒款 Ordering by specifying a brand, e.g., "Tanqueray & Tonic"
Chaser 追饮 A drink consumed immediately after a shot to ease the burn
Cobbler 三件式调酒器 Three-piece shaker with built-in strainer
Cocktail 鸡尾酒 A mixed drink combining two or more ingredients
Cordial 甜利口酒 / 浓缩糖浆 In the US: liqueur; in the UK: concentrated juice syrup
Dash 一甩 / 一滴 Unit of measurement for bitters, ≈ 0.8-1ml
Digestif 餐后酒 An after-dinner drink to aid digestion
Dirty 脏的 Adding olive brine (e.g., Dirty Martini)
Double strain 双重过滤 Using both a Hawthorne strainer and fine mesh strainer
Dry 干的 Not sweet; or using less vermouth
Dry shake 干摇 Shaking without ice to emulsify egg white
Express 挤压(柑橘皮) Squeezing citrus peel to release essential oils
Fine strain 精细过滤 Using a fine mesh strainer to remove ice shards and debris
Float 浮层 Gently layering a liquid on top of another
Free pour 自由倒酒 Pouring without a jigger, by feel (not recommended for beginners)
Garnish 装饰物 Fruits, herbs, etc. used to decorate and add flavor
Highball 高球 / 长饮 A simple tall drink of spirit + carbonated mixer
Jigger 量酒器 Measuring tool for precise liquid portions
Layer 分层 Stacking liquids using specific gravity differences
Long drink 长饮 Larger volume cocktail with soda or juice
Mixology 调酒学 The art and science of cocktail creation
Muddle 捣碎 Pressing with a muddler to release flavors
Muddler 捣棒 Tool for crushing fruits and herbs
Neat 纯饮 Served without ice, water, or any additions
On the rocks 加冰 Served over ice cubes
Proof 酒度 US alcohol measurement; 1 proof = 0.5% ABV (80 proof = 40% ABV)
Rim 杯沿 / 沾边 Coating the glass rim with salt or sugar
Rinse 涮杯 Coating the glass interior with a small amount of spirit (e.g., absinthe rinse)
Roll 滚动 Pouring back and forth between two vessels
Shake 摇酒 Vigorously agitating ingredients with ice in a shaker
Short drink 短饮 Smaller volume, higher ABV cocktail
Simple syrup 简易糖浆 1:1 sugar-water solution
Sour 酸酒 Cocktail family: spirit + citrus + sweetener
Stir 搅拌 Mixing with a bar spoon in a mixing glass
Straight up / Up 纯饮(冰镇后不加冰) Shaken/stirred with ice, then strained into an ice-free glass
Strain 过滤 Separating liquid from ice
Swizzle 搅棒搅拌 Spinning a swizzle stick in crushed ice
Throw 掷酒 Pouring between two vessels from a height
Top / Top up 补满 Filling the glass with soda or other liquid
Twist 柑橘皮卷 A twisted strip of citrus peel garnish
Virgin / Mocktail 无酒精版 / 模拟鸡尾酒 Non-alcoholic cocktail
Wash line 液面线 The fill level of a finished cocktail in the glass
Well drink 廉价酒款 Made with the bar's standard, lower-cost house spirits
Wet 湿的 Using more vermouth (e.g., Wet Martini)
Zest 柑橘皮屑 Fine shavings of citrus peel

Spirit & Wine Terms

Agave 龙舌兰(植物) The plant used to make tequila and mezcal
Aged / Añejo 陈年 Matured in oak barrels
Blanco / Silver 白色/银色 Unaged tequila
Blended 调和 A blend of multiple spirits
Botanicals 植物原料 Herbs and spices used in gin (juniper, etc.)
Bourbon 波本 American whiskey, minimum 51% corn
Brandy 白兰地 Spirit distilled from fruit (usually grapes)
Cask strength 桶强 Undiluted barrel-proof spirit
Cognac 干邑 Brandy from the Cognac region of France
Curaçao 库拉索 Liqueur made from bitter orange peel
Genever 荷兰金酒 The Dutch predecessor of gin
Grain spirit 谷物烈酒 Spirit distilled from grain
Juniper 杜松子 The core flavoring botanical of gin
Liqueur 利口酒 Sweetened and flavored spirit
London Dry 伦敦干金酒 Classic gin style
Malt 麦芽 Germinated barley; whisky ingredient
Mezcal 梅斯卡尔 Mexican agave spirit (tequila's "sibling")
Molasses 糖蜜 Byproduct of sugar refining; rum ingredient
Overproof 超标准酒精度 Spirit exceeding 50% ABV
Reposado 微陈年 Tequila aged 2-12 months
Rye 黑麦(威士忌) Whiskey made primarily from rye grain
Single malt 单一麦芽 Whisky from a single distillery
Triple sec 三重蒸馏橙味利口酒 Generic term for orange liqueur
Vermouth 苦艾酒 / 味美思 Aromatized, fortified wine
