The Paper Plane was created in 2007 by bartender Sam Ross at the legendary Milk & Honey bar in New York City. Ross was inspired by the M.I.A. song "Paper Planes" and sought to create a modern equal-parts cocktail in the tradition of the classic Last Word. The stroke of genius was incorporating Amaro Nonino Quintessentia — a refined Italian amaro — alongside Aperol and bourbon, balanced with fresh lemon juice. The result is a beautifully balanced cocktail that is simultaneously bitter, sweet, sour, and boozy without being overwhelming in any direction. The Paper Plane has since become a modern classic, cementing Sam Ross's reputation and introducing many drinkers to the world of amari.

  1. Chill a coupe glass by filling it with ice and cold water; set aside.
  2. Add 22.5 ml bourbon, 22.5 ml Aperol, 22.5 ml Amaro Nonino, and 22.5 ml fresh lemon juice into a cocktail shaker.
  3. Fill the shaker with ice cubes.
  4. Shake vigorously for 10–12 seconds until well chilled.
  5. Discard the ice water from the chilled coupe glass.
  6. Double-strain through a Hawthorne strainer and fine mesh sieve into the chilled coupe.
  7. Serve as-is — the Paper Plane is traditionally served without a garnish. If desired, express a lemon twist over the surface and discard.
